Meatloaf?! Do you like it? Does your family hate it? Try this recipe!

I don’t eat red meat. Nothing beef has gone into my mouth in over 10 years. I’m just not a fan and it grosses me out. So, we eat A LOT of everything else.
Once Dr. T and I started living together and I started building my recipe file I came across this really GREAT recipe for Turkey Meatloaf and the rest is history. I have passed this recipe on to so many family and friends and even served it to my father who is NOT a fan of turkey or meatloaf. He insists that my mom has been making a GIANT meatball and calling it meatloaf for like 30 plus years.
So, do you eat turkey on a regular basis or just on the holidays?  Try this recipe and let me know what you think.

Turkey Meatloaf

  1. 1 1/4 pound ground turkey (mix of dark and light meat)
  2. 1 1/2 cups chopped onion
  3. 1 tablespoon minced garlic
  4. 1 teaspoon salt
  5. 1/2 teaspoon black pepper
  6. 1 1/2 teaspoons of Worcestershire sauce
  7. 1/3 cup chopped fresh parsley
  8. 1/4 cup plus 1 tablespoon ketchup
  9. 1 cup bread crumbs
  10. 1/2 cup Stoneyfield farm low fat plain yogurt (I have also used Greek plain yogurt)
  11. 1 large egg, lightly beaten
Preheat oven to 400 degrees F.  In a non-stick skillet, cook the onion and garlic in oil over moderate heat. Stir continuously until onion is softened, about 2 minutes.  Place onions and garlic in a mixing bowl and add salt, pepper, Worcestershire sauce, parsley, and 1/4 cup ketchup.  Mix well. Stir in breadcrumbs, yogurt, and egg, let stand 5 minutes. Add turkey and mix well with your hands. Place turkey mixture into a lightly oiled baking pan (use a cookie sheet and shape into a meatloaf) and brush meatloaf evenly with ketchup.  Bake until a meat thermometer inserted into meatloaf registers 170 degrees F, about 50-55 minutes.  Let stand 5 minutes before serving. 
P.S. Since this is baked on a cookie sheet everyone gets to enjoy the yummy crusty edge so no fighting over the ends!
