Tasty Tuesday | Blog Hop and #Recipe Swap!

I made this quick recipe the night before we left for our trip this week. Basically its a chicken parmigiana sandwich with pork cutlets in place of the chicken. It was super simple and I served it with Alexia Sweet Potato Tots. If you haven’t tried the sweet potato tots you should. They are YUMMY! 
Italian Pork Sandwiches
  1. 1/4 cup all purpose flour
  2. 1 large egg, lightly beaten
  3. 1/2 cup dried breadcrumbs
  4. Italian seasoning
  5. coarse salt and ground pepper
  6. 4 pork cutlets (3/4 pound total)
  7. 1/4 cup vegetable oil
  8. 4 ounces fresh mozzarella sliced (I used smoked)
  9. 4 ciabatta or Portuguese rolls (I used onion rolls)
  10. 1 cup marinara, warmed
  11. 2 cups arugula
  • Place flour, egg, and breadcrumbs in separate shallow dishes. Season flour and breadcrumbs with salt, pepper, and italians seasoning. Coat pork in flour, shaking off excess, dip in egg, then coat with breadcrumbs, pressing to adhere. 
  • Heat broiler. In a large skillet, heat oil over medium-high. In 2 batches, cook pork until deep golden brown, about 3 minutes, flipping halfway through. Set a wire rack in a rimmed baking sheet. Line rack with paper towels. Transfer pork to towels and let drain 1 minute. Remove paper towel and place pork back on the wire rack. Top pork with cheese, and broil until cheese is melted, 1 minute. Divide among rolls and top with marinara and arugula.
