This is part six in a summer series I’ve been writing called summer snacks. I’m having a couple of girlfriends over tomorrow for a ladies lunch. I wanted to make something light and delicious, but not have to fuss too much. I had this recipe in my collection, but had never made it. I adapted it to use ingredients I had in my refrigerator and pantry. I think it will be a total hit and its super adorable!
Quick Fix Tiramisu Parfaits
Ingredients:
- 16 ounces Mascarpone cheese
- 1/4 cup confectioners sugar
- 2 teaspoons vanilla extract
- 2 cups fresh whipped cream, divided
- 1 package ladyfingers
- 1/2 cup prepared espresso, strong coffee, or coffee-flavored liquor {cooled}
- 1 tablespoon unsweetened cocoa powder
Method:
- In a medium mixing bowl, beat together Mascarpone cheese, sugar and vanilla. Fold in 1 1/3 cup of whipped cream. Break ladyfingers in half and dunk in prepared coffee. Place a layer on the bottom of 4 parfait glasses. {I used stemless red wine glasses.}
- In a zip top bag storage bag, add the cheese mixture and cut off one end to use like a pastry bag. Add a cheese layer to each of the 4 parfait glasses. Repeat with another layer of ladyfingers and cheese. Top with remaining ladyfingers.
- In the same zip top food storage bag, add the remaining whipped cream. Top each parfait with whipped cream.
- Sift cocoa powder of whipped cream.
