I made a Thanksgiving dinner over this past weekend. Turkey, stuffing, brussels sprouts, and mashed potatoes. All the staples. Well it never seems to fail that we somehow run out of turkey and have a bunch of leftover sides. Thats how this idea was born.
Over the Top Shepard’s Pie #TastyTuesay Recipe Swap

Ingredients
- Stuffing (1 box or whatever you have leftover)
- 1 pound ground chicken or turkey
- Mashed potatoes (1 box or 2 pounds of potatoes cooked and mashed}
- 1 cup of frozen corn, defrosted
- 1 cup of frozen peas, defrosted
- 1 box or 1 can of cream of chicken soup
Instructions
- Preheat the oven to 375.
- In a skillet heated over medium heat, cook meat until cooked through. Add cream of chicken soup, frozen corn and peas and stir until heated through. Turn off the heat and put it to one side.
- In a 9×11 inch baking dish, prepared with butter or cooking spray, spread a layer of stuffing over the bottom of the dish.
- Add the meat and veggie as the next layer.
- Finally top with mashed potatoes.
- Cook in the oven for 45 minutes covered with foil.

Well…i don’t have a link for my recipe. Just one of my family’s favorite!
Bow tie pasta
Pepperoni (cut into 4ths..or use the minis)
Minced garlic
Italian seasoning
Garlic salt…to taste
Parmesian
veggies(olives, bell peppers, ect)
Olive oil
You could even add diced chicken if you want
Boil noodles..with a little olive oil and the italian seanoning.
While they are cooking, put olive oil, garlic, veggies, pepperoni …and what ever else you want to add…get cooking just till the pepperoni is warming and the veggies starting to soften…
Add the noodles to the mixture with the italian seasoning and the garlic salt.
Cook till the noodles are a littke crisped up and the veggies cooked.
So yummy!

I am Irish and I ADORE shepherd’s pie. What is not to love with the potatoes, the meat, omg good. My husband is French and doesn’t like it so we rarely have it :/ I guess I’ll have to stop by for supper
