Pistachio Crusted Chicken | Tasty Tuesday #Recipe Swap

When my brother in law was here with his family over the New Year’s holiday he cooked us all dinner. He made filet minion, pistachio crusted chicken, potato cakes, and broccoli rabe. Since I don’t eat red meat, he made the chicken just for me. I had never had anything like it and it was simply amazing. I am totally making this again and again and adding it to my chicken rotation. You have to try it. Totally amazing and little effort.

  • 1 cup chopped pistachios
  • ½ cup bread crumbs
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • salt and pepper to taste
  • 4 thin sliced boneless skinless chicken breasts
  1. Preheat oven to 500 degrees F.
  2. Lightly coat a baking sheet with cooking spray.
  3. Mix together pistachios and bread crumbs in a shallow bowl.
  4. In a separate bowl, stir together Dijon mustard, olive oil, honey, salt and pepper until smooth.
  5. Dip chicken into Dijon mixture to coat and let marinate for at least an hour or more, refrigerated.
  6. Coat with bread crumbs. Place onto prepared baking sheet.
  7. Place into preheated oven and turn the oven down to 375 degrees F.
  8. Bake until the chicken is no longer pink and the pistachio coating is golden brown, about 20 minutes.
