A Meal in Minutes! | Tasty Tuesday

Hopping on that pregnant little violin again and talking about meals. I LOVE to cook and bake all the time. We might get takeout once a week and it usually is lunch or pizza for dinner. So, that means that all of those other meals like breakfast, lunch and dinner for seven days is made by me.

I usually never mind, but things have changed a bit. I have G to look after and she is a energetic two year old, a puppy, a hubby, and I’m six months pregnant. Its the last part that is taking all of my mojo for being in the kitchen for an extended amount of time.

So, {hangs head} I’ve looked for healthy options that are either already prepared or take very little prep. There is no shame in that right?

So, I’m glad to have found Minute® Ready to Serve Rice. As if minute rice wasn’t helpful enough…this product goes a step further. Its already fully cooked! No need to even wait for water to boil! Oh, and it comes in several flavors…

One of my favorite snacks is Rice pudding. Typically I would have to wait for the water to boil…blah blah blah. OR, I can pop open a serving of this Minute® Ready to Serve Rice and add the rest of the ingredients for my pudding.

Here is what I did to make one of my favorite snacks: Serves 4


  • 1 container/serving of Minute® Ready to Serve Rice {I used white rice}
  • 1.5 cups milk, divided
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract


  • In a saucepan combine cooked rice, 1 cup milk, sugar and salt.
  • Cook over medium heat until thick and creamy, about 15 – 20 minutes. 
  • Stir in remaining 1/2 cup milk and beaten egg and cook 2 more minutes stirring constantly.
  • Remove from heat.
  • Stir in butter and vanilla.
  • Serve warm sprinkled with ground cinnamon or keep refrigerated for two to three days.

  11. I grew up eating rice as a breakfast food with milk and sugar. My husband grew up overseas where rice is a staple for curry and main dishes. The first time I put milk and sugar on my rice he gagged. 15 years later he still thinks it’s a waste. 🙂
