Sometimes I Just Want a Big Salad | Tasty Tuesday

While my friend was visiting a few weeks back we went to a local diner, The Eveready Diner, for lunch. Of course they have a gigantic menu, but all I my pregnant belly was telling me was, “BIG SALAD.” So, that is what I got. A huge Cobb salad with ranch dressing on the side. It was so good and I’ve been thinking about it every day since.

So, yesterday T.J. was all like, “why don’t we make that salad you like for dinner?” What a good idea!

Here is my recreation of the Cobb salad I had. I think mine was so much better, but isn’t everything when you make it at home?

Cobb Salad

Ingredients:

  • fresh sliced avocado
  • sliced hard boiled eggs
  • cooked and crumbled bacon {I cooked about 6 ounces for the three of us}
  • cooked chicken breast
  • sliced tomatoes
  • croutons
  • sliced cucumbers
  • shredded cheddar cheese
  • Romaine hearts roughly torn up into bite sized pieces
  • ranch dressing {I love this yogurt ranch}

 Method:

  • Start with your lettuce and gradually add all your toppings! Top with dressing and dig in. Lots of chewing here, but totally delicious!

  3. Now I feel like I have to have that! I think I’ll make myself a big salad like that for lunch! I do get stuff stuck in my head like that, too. I had French onion soup on my mind for weeks and finally made it last week!

  4. YUM! I’ve also be craving giant salads. They are so filling without making you feel bloated and gross. And avocados! No one else in my house likes them so I eat an entire one all by myself. 😉

  9. Wow, what a perfect re-creation! I, too, love Cobb Salad for all its goodness, flavor and color. I love that Cobb Salad was “invented” by Bob Cobb, the owner of LA’s famous Brown Derby Restaurant by just taking leftovers from his refrigerator and loving it so much he put it on his menu! At the Brown Derby restaurant at Disney World, Cobb Salad is featured and oh, what a good one it is! I need to make one soon. Thanks for your wonderful recipe and reminder!
