Blueberry Banana {No Flour} Muffins :: Tasty Tuesday

While checking out my Instagram feed last week, one of my favorite Mama’s posted a recipe that she stumbled upon. She has been making it almost every single day since with her toddler so of course I had to try it. I didn’t have to buy any ingredients to make these muffins and hardly any effort was required since they are mixed right in the blender!

Turns out, this muffin recipe comes from another blog called Hart to Heart! 🙂 I love to find new blogs so this is a win win! The only modification I did was switch the fruit from strawberries to blueberries since that is what I had in the fridge.

Blueberry Banana {No Flour} Muffins

  • 2 overly ripe bananas
  • 2 eggs
  • 2 1/2 cups steele cut oats
  • 1 single serving cup, low fat, greek yogurt {I used vanilla}
  • 1 cup of blueberries
  • 3/4 cups of sugar or stevia
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda

  1. Preheat the oven to 400 degrees.
  2. Put all of the above ingredients into a blender except for the fruit.
  3. Blend ingredients until smooth {you may have to scrap down the sides and do this several times}.
  4. Pour blended ingredients into a bowl and stir in blueberries.
  5. Pour muffin mix into greased tin.
  6. Bake for 20 minutes.

This made exactly 12 muffins.

  19. I just made these muffins! I didn’t have any greek yogurt, but I did have applesauce. I thought I’d make the switch and test it… they’re delicious! Thanks for such a wonderful recipe!

My only advice… my blender is not a super nice one, but it works. I’d make sure to put the wet ingredients in the bottom and then some oats, and then some more wet. My blender had the dry ones in the bottom and it was such a pain to get them to stir up in there… ugh!!

I will be making these many more times 🙂 Thank you!! <3
