Apple Bread :: Tasty Tuesday
I mentioned last week that we went apple picking. Well, we have a TON of apples and I have been trying to find ways to use up all the apples we picked. Of course there is the typical apple treats like pie, candied, and caramel-ed, as well as apple crisp. I found a recipe for apple bread, had all the ingredients in my pantry and went for it. I changed it a bit to include brown sugar rather than just straight white sugar. I have never baked apple bread before or eaten it. Have you?
Apple Bread
Ingredients:
- cooking spray
- 1 tsp baking soda
- 1 tsp salt
- 1 cup chopped walnuts {optional and I didn’t include in my batch}
- 3 cups of peeled, cored, and sliced apples {your choice}
- 3 cups of all purpose flour
- 1 cup of vegetable oil
- 1 cup white sugar
- 1 cup brown sugar
- 3 eggs, beaten
- 2 tsp ground cinnamon
Method:
- Preheat oven to 300 degrees F (150 degrees C). Prepare 2 loaf pans (8 1/2×4 1/2-inch loaf pans) with cooking spray.
- Mix flour, baking soda, salt, walnuts, and apples in a large bowl.
- Whisk oil, sugar, eggs, and cinnamon together in a small bowl; add to flour mixture and mix until just moistened. Evenly divide mixture between prepared loaf pans. Dough will be thick.
- Bake in preheated oven until a toothpick inserted into the center comes out clean, about 90 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
