Waffelize Your Wednesdays :: Apple Eggo-dillas

Its back to school time! Not for my two little ladies, but for the many children across the nation. Maybe my husband counts too since he is a professor? 🙂 Anyway, I remember putting in those long days at school. Rushing off first thing in the morning for an early start time of 7:20am. Food was not my friend in the morning growing up, but I certainly have grown to love all breakfast foods. So much so that breakfast has become my favorite meal. I would/could eat it three or more times a day.
After a long day of thinking hard, being social, and dragging my books around, by the time I arrived home I was totally famished! I needed something to hold me over until dinner which was typically between five and six. Since, it was only 2pm, I needed something substantial. Too bad I wasn’t as savvy in the kitchen then, as I am now because I totally would have whipped up this easy and delicious little snack!
Eggo’s aren’t just for breakfast anymore and I came up with this twist on the traditional quesadilla using the original Eggo waffle! Its just perfect for this time of year too. Apples, cheese, and a waffle. A Fall-themed back to school snack!
- 1 original Eggo, or Eggo of your choice, cut in half
- 1 thinly sliced and peeled Macintosh apple
- sprinkle of your favorite sharp cheddar cheese
- Lightly toast your Eggo waffle
- Melt a little bit of butter in a skillet.
- Place one half of the Eggo in the skillet.
- Top with sliced apple and cheese.
- Place the other half of the Eggo on top of the filling.
- Cook until golden on both sides.
