Dairy Free Oatmeal Chocolate Chip MilkMakers :: Tasty Tuesday

I had ordered milk making cookies from the web, but that was before I decided to go dairy free during my breastfeeding journey with Val. The cookies I had ordered had real chocolate chips and butter. They were totally delicious, but the more I thought about it, the more I figured I could totally save myself some bucks and make them at home.

Plus, I’ve been living in the house now for a little over three months and haven’t made cookies?! How could that be? I had to put that beautiful LG oven to the test.

Here is what I came up with. I adapted this from a bunch of recipes I researched online and totally made it my own. Whether they boost my milk or not, they are super delicious. 🙂

  • 1 cup coconut oil
  • 1 cup sugar
  • 1 cup firmly packed brown sugar
  • 2 tablespoons water
  • 2 tablespoons flax seed meal
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups oats
  • 1 cup diary free or regular chocolate chips
  • 4 tablespoons brewer's yeast
  • 2 tablespoons Mrs. Patels Munch Crunch, optional
  • Nuts of your choice, I used almonds
  1. *This batter is thick. I used my KitchenAid stand mixer.*
  2. Preheat oven to 350°.
  3. Mix the flaxseed meal and water and let sit for 3 minutes.
  4. Beat coconut oil, sugar, and brown sugar well.
  5. Add eggs and mix well.
  6. Add flaxseed mix and vanilla, beat well.
  7. Sift together flour, brewers yeast, baking soda, and salt.
  8. Add dry ingredients to butter mix.
  9. Stir in oats and chips.
  10. Scoop onto baking sheet. I used a ¼ cup cookie scooper.
  11. Bake for 12-15 minutes.
  12. Let set for a couple minutes on the baking sheet then cool on a wire rack.
