The Best and Easiest Summer Sandwich
Hey there friends! I know I’ve been awfully quiet over here but we are in full blow summer mode!
I want to share this delicious recipe for a caprese sandwich that I put together yesterday for a quick lunch. I was really craving a sandwich and with no cold cuts to use I came up with this. I was making the kids grilled cheese for lunch and decided I should have my own adult version!
I had some delicious Canon Gluten Free bread. This is definitely a favorite between me and my husband and easily found at the local grocery stores.
I first toasted the bread because I wanted to keep it crispy. Gluten free bread can be funny like that if you use it right out of the bag. I keep my bread in the refrigerator.
I warmed up a small skillet and buttered each side of the bread. I then picked some of my fresh basil leaves from the garden, and gave them a quick rinse and pat them dry. I sliced some buffalo mozzarella into thin slices and some fresh tomato too. After I sliced the tomato I sprinkled it with a bit of salt and pepper.
Now that the skillet is hot and I have all my ingredients prepped I assembled my sandwich. I put one slice of bread with the butter side facing out down on my cutting board, and then layered the cheese, basil and tomato and then put my top slice of bread. I put my sandwich into the pan over low heat and covered it with a lid to melt the cheese. After a few minute I lifted the lid to flip the sandwich over. I also burnt my finger because I grabbed the lid without an oven mitt. Honestly. Thank goodness I keep an aloe vera plant in my kitchen.
Mozzarella gets so perfectly melty and delicious! Caprese salad is my all time favorite summer snack or meal on a hot summer day and it is perfectly paired with a glass of white wine! A filling and delicious little meal that requires no cooking and comes together in a few minutes. You can skip the bread and just assemble the basil, mozzarella and tomatoes on a plate with some salt, pepper and a drizzle of balsamic. My favorite balsamic glaze is from Trader Joes. It is such a good add on to so many dishes! I drizzled it over my sandwich and it was DELICIOUS!
