Several months ago my husband was having some stomach trouble. He went to his doctor and after several different tests and lots of conversation she thought it best to remove gluten from his diet.
After some rounds of antibiotics during the cold and flu season, she said it was possible that the meds stripped some of the bacteria in his stomach that helps digest gluten. It didn’t sound unreasonable and omitting gluten and adding some vitamins along with a probiotic and the tummy troubles are gone.
More recently I too have decided to omit gluten from my diet. Since I’ve changed my cooking A LOT to make meals that the entire family can eat, together. The kids still eat crackers and snacks, but for dinners we’ve switched over to gluten free pastas and breads, adding more quinoa and grains and they don’t seem to mind a bit!
I feel like I have more energy, and I love not feeling bloated and heavy after eating a gluten filled meal.
Now, lunches can be a challenge – if you are craving a sandwich what bread are you going to choose? We’ve tried a lot of gluten free breads, but some are pretty meh at best. What about when you are craving a bagel with cream cheese? Going gluten free isn’t easy especially when you are bread-aholics like my husband and I. We love a good loaf of fresh Italian bread. A loaf use to easily disappear with our family of 5 during a Sunday pasta dinner.

This stuff is so good! I love the pita breads for my tuna and spinach sandwiches or the good old ham and cheese! I can keep the breads frozen and take out only what I need. It thaws quick, but I usually give it a light toast which really seems to develop the flavor.
