Week Four of Whole 30
Here we are the home stretch of this January Whole 30!
Guys! I am so sick of eggs!
After two weeks of egg casseroles for breakfast I had to find something else. I was almost gagging them down in the morning. What fun is that when you have a thirty day meal plan with so many eggs in sight?!
I turned to Pinterest and made that pumpkin and apple breakfast bake last week and this week I made some Whole 30 approved banana muffins. This really helped. I also just wasn’t super hungry some mornings so had a sliced banana or apple with almond butter. Clearly my appetite has decreased over the past 23 days!
I never noticed how much fruit I just WAS NOT eating. I serve my kids fresh fruit all the time, but was never eating any. Go figure. Now I notice because I’m at the market buying fresh fruits at least twice a week. That has been hard on the grocery budget since we are a family of 5 and it is the dead of winter. Organic apples can range from $1.99 – $3 a pound! A big jar of organic applesauce has been a must for helping save cash.

I still am feeling really good! Energy is up and skin is amazing. Still thinking about how I will transition once this thirty days is over. We’ve been talking about it in my Facebook group and most want to keep off the gluten and sugar. I am looking forward to a small glass of wine every once in awhile! I’ve missed that!
The amount of meal prep and cooking is insane. I mean, I cook and bake a lot at least seven days a week but this has been like almost doubling the cooking. The kids aren’t eating everything I am so at lunch I’m making two or three meals, at dinner at least two meals which makes the dish washing insane. You can only put so much in the dishwasher ya know.
I use to ONLY take my coffee with some kind of sugar be it a teaspoon or some kind of add in like vanilla syrup. I think I finally kicked that habit to the curb. I really didn’t like adding the NutPods as my “creamer” but I think I’ve gotten pretty use to the taste and I like the flavor variety they have as well. It tastes really good when the coffee is iced! I wish I would have know about this creamer when I was dairy free and nursing those babies! Anyway, if you are dairy free this is a great alternative.
Once the weather gets it’s act together I want to start walking! I’m thinking about adding on to my Facebook group once Whole 30 is over to include fitness! Stay tuned!
