Week Two of Whole 30
Hi there! Here I am into the second week of my January Whole 30. Want to see what I’ve been eating?
I’m feeling pretty good. Day one was not bad and day two I was a bit grumpy. Day three I was starving even though I was eating plenty and by day four things seemed to regulate.
I’m not making anything wild. My food has been pretty basic, but that is due to my time being very tight most days. I have meals prepped so I’m not left staring into the refrigerator or pantry.

Last week I made that breakfast casserole which had that meal checked off for the week! Lunches is were I tend to get stumped. I was eating salads topped with tuna or chicken salad until the romaine lettuce recall. Now I’m on the fence with eating salad in general until that issue is resolved. I resorted to quick soups or compliant burgers topped with guacamole and a side fruit for a warm and satisfying lunch.
It didn’t help that we had sub zero temperatures last week which makes me feel like I need to eat to feel cozy and warm. But, I didn’t. I like to snack on RX Bars, Lara Bars and fruit if I feel snack. Today I found some BARE fruit at Target and although it was super pricey even on sale, I grabbed two packs of Cinnamon Apples. After taste testing on the ride home I found it a justifiable purchase! 🙂
The plan has been easy to follow this round probably because I knew what to expect from previous years. I signed up to try Blue Apron for the first time too seeing as they had Whole 30 meals. I’m not sure if I will continue the service, but I couldn’t beat the intro price of $15 for two meals that will feed me and my husband. So, more on how that turns out next week as my first order is due to arrive this Friday! Have you tried Blue Apron?
