Whole 30
Happy January 2nd!
Before the New Year I thought back to how I had tried Whole 30 before and liked the results. I am already living a gluten free lifestyle, but with each New Year I like to hit the reset on almost everything.
After a couple of months of holidays and more sugar and adult beverages than I like to admit. My gut is feeling off and my skin wasn’t looking its best. I cheated with a few gluten foods too like a dinner roll, bagel, and pizza! Once you fall off the wagon so to speak with the gluten and carbs DAMNIT. So hard to get back. It left me feeling blah and fighting some minor headaches. I didn’t like the way I felt and made it a goal to start over on January 1 with my healthy eating.
I have several friends who also like to try the Whole 30 plan in the New Year too. I created a Facebook group for us to share our day to day meals, recipes, struggles, and most of all SUPPORT one another through 30 days.

30 days seems like a lot, but it really isn’t. If you have planned ahead this is really easy. Food prep and grocery shopping is key to success here. Otherwise you will be left feeling hungry and rummaging through the pantry or fridge and back to old habits.
Winter is so hard here in Connecticut. We have been dealing with insanely low temperatures which leaves no desire to head outdoors. All I want to do is hibernate with cup after cup of tea and coffee and all my favorite snacks! See you in the Spring! Yeah right!
Here is how I prep! On Sunday’s I roast a bunch of veggies with a little olive oil or coconut oil and salt and pepper. Brussels sprouts, sweet potatoes, green beans, and broccoli are some of my favorites to roast! The pink Himalayan sea salt from Trader Joe’s is one of my favorites. It comes in a small salt grinder and is just fab! If you are going to shop for a Whole 30 and are lucky enough to live near a Trader Joe’s you can get everything you need there in one stop shopping. I’ll be writing a separate post including all my Trader Joe’s Whole 30 finds later this week.
I also make a big egg casserole with a bunch of veggies and meat. I like to get some sweet Italian sausage, remove the casing and cook it up in a big skillet with peppers, onions, a bit of coconut oil, cherry tomatoes and fresh spinach! A little dash of salt and pepper and I add it to six eggs and a cup of water. Use whatever ingredients are your favorite or you have on hand! This is a great way to clear out the fridge with veg that is about to go bad. As long as it is Whole 30 compliant you can add it in!
Here is the outcome! A breakfast casserole that will take me through good five or six mornings. I add some fresh fruit along side and reheat a serving of the casserole in the microwave. I have a compliant and healthy meal each morning in minutes.
