Favorite Things Friday – Instant Pot
I have to tell you about my new favorite thing! T.J. had been looking at buying a rice cooker for awhile now and on black Friday he was looking for a deal. After looking over Amazon’s deals for a bit he decided to get an all in one type of cooker and pressed purchase on an Instant Pot!
We ordered the Instant Pot DUO Plus 60, 6 Quart 9-in-1. The Duo Plus replaces 9 common kitchen appliances including Pressure Cooker, Slow Cooker, Rice Cooker, Yogurt Maker, Egg Cooker, Sauté, Steamer, Warmer, Sterilizer and it makes cake too!
We eat a gluten free diet so to occasionally incorporate whole grains we like brown rice. If you’ve ever cooked brown rice, you know it takes a good 45 minutes on the stovetop. Keeping my eye on a pot of rice is just not practical at dinner time. I’m usually home ALONE cooking dinner and combine that with after school activities and homework, my time is short. So, I usually just opt for the frozen brown rice that I can pop into the microwave and reheat. Its easy, but I’m obviously paying a premium for the convenience.
I know we are probably late to the game here. The Instant Pot has been on a roll for over a year now. I never saw the need since I already had a crock pot and always thought they were one in the same. Not even close guys.
Before the Instant Pot arrived to my door I created a Pinterest board. I was ready to rock and roll with this new to us kitchen wonder! I felt like a Mom of the 50s with some amazingly modern piece of kitchen technology ready to make my life easier at dinner time.
The first thing I made was hard boiled eggs. I always keep hard boiled eggs ready in the fridge for a quick snack. Usually I boil them in a pot on the stove, wait for them to cool, and then painstakingly peel them. Some times I get a good easy peel batch and a lot of times I don’t. Guess what!? The Instant Pot cooks the eggs to hard boil within minutes to perfection and the peels come off WITHOUT ANY EFFORT! I am amazed and would buy this machine just for this!
After hard boiling eggs in just a few minutes, I went on to making dinner. I made these awesome CHICKEN BURRITO BOWLS and the kids devoured it! There was nothing left for leftovers and dinner was ready in less than thirty minutes! I was able to sautés the raw chicken in the Instant Pot and then add the rest of the ingredients and cook the entire dish in one pan. The cleanup is so minimal too!
A few months ago I went to a friends house and we made a big batch of elderberry syrup to get ready for cold season. She cooked the entire big batch of syrup in the Instant Pot. That was my first time really getting an up close look at how this thing works.
A few more recipes I’ve made are Italian Wedding Soup, Lemon Chicken Thighs, brown rice, and sweet potatoes! I will share my Italian Wedding Soup recipe soon. Just want to tweak a few things to get it perfect.
