Easy Breakfast Egg Casserole

Serves: 6-9 servings
  • 6-8 eggs
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp olive oil or butter
  • ½ cup milk or water (if dairy free)
  • 1-2 cups fresh or frozen chopped vegetable of your choice (I used broccoli and sweet bell peppers)
  • 1 small onion chopped
  • 1 clove of garlic minced
  • cooking spray
  1. Preheat the oven to 400 degrees F.
  2. In a small sauté pan, on medium heat, melt the butter or oil and add your chopped onion, garlic, and vegetables. Cook 5-10 minutes or until tender.
  3. Crack your eggs into a small bowl, and whisk in the milk or water, salt and pepper.
  4. Grab an 8x8 baking dish, spray lightly with cooking spray and add the cooked vegetables. Top the cooked vegetables with the eggs and put into a the oven for 15-20 minutes or until the eggs are set and cooked through.
